The wine is aged for 15 months in Allier and Bertranges barriques of which 25% is new. The grapes are harvested manually. The selection of the grapes at harvest is very strict, it is a threefold sorting: in the vineyard (twice) and in the winery on the sorting table. The grapes are pressed upon arrival at the winery. The juice ferments under a low temperature to optimally preserve all flavors. One starts the alcoholic fermentation in barrels to get a regular fermentation. Justin uses only natural yeasts to maintain the charm and character of each wine.
Tasting Notes: Pale yellow color, offers a nose with fruity aromas: peach, melon, apricot and exotic fruits. The taste is very intense with a long finish on minerality and light vanilla notes.
