According to Peter Sisseck, 2019 is even better than 2018
Peter Sisseck himself on the PSI 2019; Harvested 24/9 to 7/10 from 63 plots and 21 villages (145 Ha) more importantly, this is almost 70% from the same vineyards we harvested in 2018. This makes the winemaking process so much easier. The 2019 is easily the best PSI we've made yet. It follows the line of the 2016 and 2018. Great drinkability from the start, very juicy and with “sexy” tannins. It has a great “flow” feel to it. The oak is very well hidden behind the fruit and the long and fine-grained tannins are nicely present. Close to the ideal I had in mind when I “invented” this wine in 2007.
The PSI is wine from the renowned winemaker Peter Sisseck who is also known for the cult wine Pingus and Flor de Pingus. Peter Sisseck's famous bodega Dominio de Pingus in Ribera del Duero is going to give its wines considerably less wood. He thinks he who exaggerates suffers from winemaker laziness.
The healthier the vineyard and the better the management, the less aging is necessary, is his point of view. In Brazil, the same vision was expressed when Wijnwijs.eu visited one of the top wine boutiques. Sisseck previously noticed that new oak produced wine from a certain plot reduction in the barrel. Immature tannins started to absorb oxygen. The bodega wants to avoid this in the future by drastically reducing the use of wood. Less but much more expensive, because Dominio de Pingus now uses Taransaud's T5, which costs 1200 euros. Almost twice as expensive as the usual 225 liter barriques.
